Applesauce Cocoa Bread1 2/3 cups flour 3/4 cup granulated sugar 1/3 cup unsweetened cocoa powder 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1/4 teaspoon ground cinnamon Dash of ground nutmeg 1/2 cup shortening 2 eggs 1 cup applesauce 1/2 cup chopped pecans Vanilla Glaze Preheat oven to 350 degrees F. Grease bottom only of 9 x 5-inch loaf pan. In large bowl, stir together flour, sugar, cocoa, baking powder, baking soda, salt, cinnamon, and nutmeg. Add shortening, eggs and applesauce; beat just until blended. Stir in pecans. Spoon mixture into prepared pan. Bake 50 to 55 minutes or until wooden pick inserted in center comes out clean. Cool 15 minutes; remove from pan to wire rack. Cool completely. Prepare Vanilla Glaze; drizzle over bread. Vanilla Glaze 1/2 cup confectioners' sugar 3 to 4 teaspoons milk In a small bowl, stir together confectioners' sugar and milk. Yields 1/4 cup glaze.
