Eggs in Purgatory3 tablespoons olive oil 4 cloves garlic, minced 7 fresh large tomatoes, skin and seeds removed, cut up Fresh parsley, minced Fresh basil, minced Salt and black pepper to taste 3 jalapeno or serrano peppers 8 eggs Put olive oil in to a large frying pan. Saut? garlic until golden brown. Add tomatoes, parsley, basil, salt and pepper and peppers to the skillet. Cook until the tomatoes are done (about 45 minutes). Break the 8 eggs into a side dish without breaking yolks, then slide them into the frying pan. Cover the pan with a lid and simmer slowly until the eggs are cooked. Serves 4.
