Mom's Puffy French ToastPosted by LladyRusty at recipegoldmine.com 2/6/2002 9:56 am Source: by LladyRusty's Mom 3 eggs 1 cup all-purpose flour 3 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons granulated sugar 1 teaspoon light brown sugar 1/2 cup buttermilk 2 tablespoons butter, melted White bread, dried overnight 1/2 cup shortening Warm maple syrup Break eggs into a large bowl. Beat eggs, with an electric mixer, on high for 2 minutes or until they are light and fluffy. Sift in flour (mixed with baking powder), salt, granulated sugar and brown sugar. Beat until smooth. Add buttermilk and butter. Beat until just combined. Don't over-beat. Slowly heat shortening in a heavy skillet. Dip bread into the batter to coat. Let bread sit in the batter for about 1 minute on each side. Saut? battered bread for about 3 minutes on each side or until it's golden brown and puffy. Serve with warm maple syrup.
