Pineapple Upside Down Cake1 cup brown sugar 2 tablespoons pineapple juice Pineapple rings 1/3 cup butter 1/2 cup chopped nuts (optional) Maraschino cherries 1 (18.25 ounce) box yellow cake mix Spread brown sugar in the bottom of a 13 x 9-inch baking pan. Sprinkle with pineapple juice. Arrange pineapple rings over the sugar mixture. Dot with butter. Sprinkle with chopped nuts, if desired. Put a maraschino cherry in the center of each pineapple ring. Prepare the cake mix and pour into the pan carefully. Bake for 1 hour at 350 degrees F. Cool for 5 minutes and invert on a serving tray.
