Recipe for Marzipan from the Candy section.
Marzipan2 1/2 pounds ground almonds 2 1/2 pounds confectioners' sugar 1/2 to 1 teaspoon almond extract Rosewater Mix ground almonds with confectioners' sugar and almond extract. Moisten with rosewater, a little at a time, being careful not to get the mixture too wet. Mix thoroughly and knead to a consistency suitable for modeling with the hands. NOTE: If using bitter almonds, do not use almond extract.
