Skillet Spanish Rice6 to 8 slices bacon 1/2 cup chopped onion 1/2 cup chopped green bell pepper 1 can stewed tomatoes 1 small can tomato sauce 1 cup rice Salt and pepper, to taste Fry bacon in a large cast iron skillet. Remove bacon strips and set aside. In remaining bacon grease, saut? onion and pepper over medium heat. Cut stewed tomatoes into pieces and add to skillet with 1/2 can of water. Add remaining ingredients and bring to boil. Cover; reduce heat to low and simmer 15 minutes until done. Crumble bacon over top and serve.
