Texas Fajitas2 small packages skirt steak 1 large onion, sliced into strips 2 small green bell peppers, sliced into strips Fresh garlic cloves, chopped or crushed 1 small carton sour cream Salsa or prepared guacamole 1 package small or large flour tortillas Lime juice (optional) Olive oil Cut skirt steaks into thin strips. Combine with onions and bell peppers. Quickly fry, tossing almost constantly, in a hot cast iron skillet, basting with a mixture of lime juice, garlic and olive oil. Season with salt and pepper. Place in the center of warm flour tortillas. Top with sour cream, guacamole and salsa. Roll up and enjoy.
