Cashew Blondies2 eggs 2/3 cup granulated sugar 1 teaspoon vanilla extract 8 (1 ounce) squares white baking chocolate, melted and cooled 1/3 cup butter or margarine, melted 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 to 1 cup chopped salted cashews or pecans In a mixing bowl, beat eggs, sugar and vanilla extract on medium speed for 1 minute. Beat in chocolate and butter. Combine flour, baking powder and salt; gradually add to chocolate mixture. Stir in cashews. Spread into a greased 9-inch square baking pan. Bake at 350 degrees F for 25 to 30 minutes or until a wooden pick inserted near the center comes out clean. Cool on a wire rack. Cut into bars. Yields 2 dozen.
