Ginger JamsSource: Land O Lakes Holiday Cookies, 2000 Serving size: 42 1 3/4 cups flour 2 teaspoons ground ginger 1/2 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/4 teaspoon baking soda 1/8 teaspoon black pepper (YES...black pepper) 1/2 cup butter, softened 1/2 cup granulated sugar 1/2 cup packed brown sugar 1 egg 1 tablespoon light molasses 1/2 cup seedless raspberry spreadable fruit or orange marmalade Preheat the oven to 350 degrees F. Stir together flour, ginger, cinnamon, cloves, baking soda and pepper in a medium bowl. Place butter, sugar and brown sugar in a large mixer bowl. Beat at medium speed, scraping the bowl often, until creamy. Add egg and molasses; beat until well mixed. Reduce speed to low. Add flour mixture; beat until well mixed. Shape dough into 3/4-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake for 8 to10 minutes or until lightly browned. Cool completely. Place 1/2 teaspoonful of jam in the center of the flat side of one cookie; top with a second cookie, flat side down. Press together lightly. Repeat with the remaining cookies.
