I decided to make them today for an open house graduation party and I could not believe how addictive they were. Even strangers were coming up to me asking for the recipe and the people at our table kept coming back with handfuls and the excuse that they just couldn't stay away! They are soft inside and a slightly hard sugar crust on the outside! WATCH OUT! 2 2/3 cups oil 4 cups granulated sugar 4 eggs 1 cup molasses 6 1/2 cups flour 2 2/3 teaspoons baking soda 2 teaspoons salt 1 1/3 teaspoons ground cinnamon 1 1/3 teaspoons ground ginger In a large bowl, combine all the ingredients and refrigerate for about 1 hour. Preheat oven to 375 degrees F. Roll dough into balls the size of walnuts. Roll balls in sugar and press down SLIGHTLY on a cookie sheet, spacing 2 inches (they will expand) and bake for 10 to 12 minutes. Cool about 1 minute on cookie sheet and transfer to wire rack. They will stay chewy even if left out for a while. Makes about 4-5 dozen but I didn't count!
