Stirred Custard3 large eggs, well beaten 3/4 cup granulated sugar 1 quart milk 1 tablespoon vanilla extract Dash of ground nutmeg Combine eggs and sugar in a large saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and coats a metal spoon (about 20 minutes). Cool custard slightly. Stir in vanilla extract and nutmeg; cover and chill. (This mixture is pouring consistency.) Makes 5 cups.
