Burnt Honey Sauce1 cup granulated sugar 1/2 cup clear honey In a heavy-base saucepan, dissolve sugar in 4 tablespoons water. Bring to a boil and boil for 5 minutes or until it becomes a deep brown caramel. Off the heat stir in another 4 tablespoons of water, taking care as the mixture will splatter. Cook for another 1 to 2 minutes until the temperature reaches 240 degrees F. Stir in the honey and remove from the heat. Let cool. Serves 6 to 8.
