Rhubarb Crisp3/4-inch lengths rhubarb 2 cups granulated sugar, divided 1 cup all-purpose flour 1/2 teaspoon baking powder Pinch salt 1 egg Cut enough rhubarb to fill a 9-inch square glass baking dish 2/3 to 3/4 full. Sprinkle 1 cup sugar over the rhubarb and stir to mix. In a bowl mix remaining 1 cup sugar, flour, baking powder and salt. Slightly beat egg and mix into flour mixture with fork until crumbly. Sprinkle on top of rhubarb. Bake at 350 degrees F until done and lightly browned - about 30 to 40 minutes. Use wooden pick to test for doneness.
