Italian Coating Mix4 cups fine bread crumbs 1/2 cup grated Romano or Parmesan 1/2 cup vegetable oil 3 small cloves garlic, crushed 1 cup chopped parsley 1 teaspoon salt 1 teaspoon pepper Combine all ingredients in a large bowl; mix thoroughly. Place in refrigerator for up to 1 week or store in freezer. To use: Place 1 1/3 cups coating mix in bag; moisten pieces of a 2 1/2-pound chicken with water. Shake several pieces at a time in bag to coat. Place chicken, one layer deep, in shallow pan. Bake at 400 degrees F for 40 minutes until brown and tender.
