Lemon Mix2 1/2 cups presweetened powdered lemonade mix 1 cup plus 2 tablespoons cornstarch 1 1/4 cups granulated sugar 1 teaspoon salt Mix well. Store in an airtight container. Label and store in cool, dry place. Use within 6 to 8 months. Makes 4 cups. Hot Lemon Sauce Combine 1 cup water and 1/4 cup Lemon Mix in a small saucepan. Bring to a boil, stirring constantly. Remove from heat. Add 2 tablespoons butter. Serve warm over gingerbread, pound cake, apple pie or other desserts. Luscious Lemon Pie In a large saucepan combine 1 1/4 cups Lemon Mix, 1/2 cup water and 3 egg yolks. Mix until smooth. Add 2 more cups water. Cook over medium heat until thick and bubbly; stir constantly. Remove from heat. Add 2 tablespoons butter. Cover and let cool for 5 minutes. Stir and pour into baked pie crust. Cover and refrigerate for 3 hours. Top with whipped cream or meringue.
