Bran and Date MuffinsPosted by jerseyjan at recipegoldmine.com 7/21/01 12:05:45 pmRemember taking these over to a new neighbor one morning many years ago, still warm, wrapped in checkered cloth and nestled in a basket. Days gone by....Stir until smooth then cool:1 cup boiling water
1 cup dates
2 1/2 teaspoons baking sodaCream:1/2 cup shortening
1 cup granulated sugar
2 eggsAdd:2 cups 100% All Bran
1/2 cup chopped nuts
1/2 tablespoon salt
2 cups buttermilk
2 1/2 cups flour
1 cup 40% Bran FlakesAdd the date mixture and bake in muffin pan for 15-20 minutes in a 400 degree F oven.Refrigerate leftover dough; it will keep for a few weeks.
