Apple Pepper Jelly2/3 cup hot pepper (jalape?o, haba?ero), finely minced 2 1/2 cups apple juice 2 tablespoons vinegar 6 cups granulated sugar 1 package pectin 3/4 cup water Few drops green food coloring Mix first four ingredients. Boil pectin and water for one minute. Add green food coloring. Stir all together until sugar is entirely dissolved. Strain, and pour immediately into sterilized jars.
