Recipe for Tamarind Marmalade from the Preserving section.
Tamarind Marmalade1 quart tamarinds 1 1/2 cups water Granulated sugar, heated Simmer tamarinds in water until soft. Put through a sieve to remove fibers and seeds. Measure, then heat the pulp. For each cup of pulp add 1 cup of heated sugar. Simmer, stirring constantly, until the mixture thickens. Put mixture into sterilized glass jars, then seal with paraffin.
