Coconut Bread4 eggs 2 cups granulated sugar 1 cup vegetable oil 2 teaspoons coconut flavoring 3 cups flour 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup buttermilk 1 cup coconut 1 cup chopped nuts In one bowl blend eggs, sugar, oil and flavoring. In another bowl, blend dry ingredients. Alternate flour and buttermilk with egg mixture. Stir in coconut and nuts. Bake in a preheated 325 degree F oven in two loaf pans about 1 hour. While bread is hot in pans, pour Glaze over. Remove bread from pans and cool on wire rack. Glaze 1 1/2 cups granulated sugar 3/4 cup water 3 tablespoons butter 1 teaspoon coconut flavoring Combine sugar, water and butter in a saucepan. Boil 5 minutes. Add flavoring.
