Recipe for Irish Gingerbread from the Quick Bread section.
Irish Gingerbread2 teaspoons margarine 1 1/2 teaspoons baking soda 1 teaspoon ground ginger 1/2 cup soft margarine 1 egg 1 cup molasses 1 cup hot water 2 cup flour 1 teaspoon cinnamon 3/4 teaspoon salt 1/2 cup granulated sugar 2 egg yolks 1/2 cup quick cooking oatmeal Measure flour, baking soda, cinnamon, ginger and salt. Combine margarine and sugar in a bowl and blend. Add egg and yolks. Beat until fluffy. Stir in molasses. Add dry ingredients, oatmeal and hot water, 1/4 at a time to egg mix. Pour into an 8-inch greased pan. Bake for 50 to 55 minutes at 350 degrees F.
