Eddie's Grill Jicama SlawThis is a favorite at Eddie's Grill, Phoenix, Arizona. 3/4 cup snow peas, julienned 3/4 cup jicama, julienned 1/2 cup carrots, julienned 2 tablespoons cilantro, chopped 1/4 cup green cabbage, shredded 1/4 cup red cabbage, shredded 1 tablespoon olive oil 1 tablespoon lime juice 1 1/2 tablespoons aged rice wine vinegar 1 teaspoon kosher salt 1 teaspoon black pepper In a large bowl combine all of the ingredients and mix well. Makes 4 servings.
