Patria Spiced Tropical Fruit SoupSource: Patria, New York City Yields 8 to10 servings 750ml bottle Muscat wine 30 coriander seeds 15 bay leaves 12 cloves 20 black peppercorns 4 star anise 1 cinnamon stick 34 ounces water 7 ounces granulated sugar 5 fresh thyme sprigs 1 papaya, diced 1 mango, diced 1 pineapple, diced 1 strawberry papaya, diced 1 star fruit, diced Combine wine, spices, water and sugar in pot. Boil 10 minutes; remove from heat. Add thyme, cover and chill. Strain. Add diced fruit. Serve chilled with crystallized thyme.
