Moreover, I'd have to say that these are some of the best cookies I have ever had. I honestly can't say I have ever had a better sugar cookie! We, of course, also loved the slightly-crisp-on-the-outside and chewy-on-the-inside texture. Unfortunately, I couldn't find butter flavored shortening. That's far too exotic for this part of the world (lol)! Instead, I added 2 teaspoons butter extract to the cookie batter. These cookies were soooo good!!!! Everyone in my family loved the buttery, lemon flavor of these cookies (each bite leaves a nice, mellow afterglow in your mouth). The flavors also intensified noticeably on the second day (These cookies are so good that some folks may have NOTHING left on the second day!). Thanks for posting a keeper! 1/2 cup butter or margarine, softened 1/2 cup butter-flavored shortening 1 cup granulated sugar 1 egg 1 tablespoon milk 2 teaspoons lemon extract 1 teaspoon vanilla extract 2 1/2 cups all-purpose flour 3/4 teaspoon salt 1/2 teaspoon baking soda Additional sugar In a mixing bowl, cream butter, shortening and sugar. Beat in egg, milk, and extracts. Combine the flour, salt and baking soda, gradually add to cream mixture. Shape into 1 inch balls or drop by rounded teaspoons 2 inches apart onto ungreased baking sheets. Flatten with a glass dipped in sugar. Bake at 400 degrees F for 9-11 minutes or until edges are slightly brown. Move to wire racks to cool.
