Forgotten Pork Stew1 1/2 pounds pork stew meat, cut into 1-inch cubes 3 medium carrots, cut into 3/4-inch pieces 3 medium potatoes, peeled and quartered 2 stalks celery, sliced 1 medium onion, chopped 1 (10 ounce) package frozen lima beans, thawed 1 can condensed tomato soup 1/2 cup water 2 tablespoons quick-cooking tapioca 1 teaspoon salt 1/2 teaspoon dried basil, crushed 1/4 teaspoon garlic powder 1/4 teaspoon ground red pepper In a Dutch oven combine meat, carrots, potatoes, celery, onion and lima beans. Combine tomato soup, water, tapioca, salt, basil, garlic powder and red pepper. Add to Dutch oven; stir to combine. Cover and bake at 325 degrees F for 2 to 2 1/4 hours or until meat and vegetables are tender. Makes 4 servings.
