Bran Muffins1 cup All-Bran 2 eggs 1/2 teaspoon baking soda 1 teaspoon cinnamon 1/2 cup sugar-free applesauce 1/8 teaspoon ground ginger (optional) 1/2 cup dry milk powder 3 packages sweetener 1/2 teaspoon baking powder 1 teaspoon vanilla extract 1/8 teaspoon nutmeg (optional) Mix dry ingredients in bowl; add wet ingredients and mix thoroughly. Bake in muffin pans lined with paper muffin cups at 350 degrees F for 20 minutes. Makes 8 large muffins.
