Turkey Sausage Patties2 pounds ground turkey 2 teaspoons salt 2 teaspoons freshly-ground pepper 2 teaspoons chopped fresh sage or 1/2 teaspoon dried sage 2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg, allspice or mace Olive oil (for frying) In a large bowl, combine the turkey, salt, pepper, sage, thyme, ginger and the nutmeg, allspice or mace. Mix together well. Scoop out a small nugget of the mixture. Fry in a little olive oil, taste and adjust the seasonings. In a large frying pan over high heat, warm a thin film of olive oil. Fry the patties, turning once, until golden and cooked through, about 4 minutes on each side.
