Cranberry BreadNonstick cooking spray 1 cup all-purpose flour 1/2 cup whole-wheat flour 1 cup granulated sugar 1 1/2 teaspoons cinnamon 1/2 teaspoon salt 1/2 teaspoon baking soda 3 egg whites 1/3 cup applesauce 3 tablespoons buttermilk 1 1/2 cups fresh cranberries 1/2 cup chopped walnuts Preheat oven to 350 degrees F. Lightly coat a loaf pan with nonstick cooking spray. In a medium-size bowl, combine flours, sugar, cinnamon, salt and baking soda. In a larger bowl, beat the egg whites at high speed for 1 minute. Beat in applesauce and buttermilk. Gradually add the flour mixture and beat until combined. Stir in cranberries and walnuts. Transfer to prepared loaf pan. Bake for 45 minutes or until the edges begin to pull away from the sides of the pan and a wooden pick inserted in the center comes out clean. Slice and serve. Makes 12 slices.
