Smothered Dove12 doves 6 tablespoons butter 3 tablespoons flour 2 cups chicken broth 1/2 cup sherry wine Salt and pepper, to taste Brown doves in heavy skillet or Dutch oven in melted butter. Remove doves to baking dish, breast down. Add flour to skillet and stir well. Slowly add chicken broth, sherry, salt and pepper; blend well and pour over doves. Cover baking dish and bake at 350 degrees F at least 1 hour. Serve over cooked rice. Serves 4.
