Veggie Quesadillas6 soft taco-size flour tortillas 1 large red onion, diced 1 large tomato, diced 2 Anaheim chile peppers, seeded and diced 1 teaspoon chili powder 4 tablespoons Italian dressing, divided 1/4 cup chopped cilantro 3 cups grated Monterey jack cheese Salt-free seasoning 6 to 12 tablespoons sour cream Combine onion, tomato, chiles, chili powder and 1/2 of Italian dressing in microwavable bowl; microwave 4 minutes or until vegetables are tender. Stir in cilantro. Sprinkle 1/2 cup cheese on 1/2 of each tortilla and top with 3 tablespoons vegetable mixture. Brush outside of tortillas with remaining dressing and sprinkle with a salt-free seasoning for color. Microwave open-faced 1 minute or until cheese melts. Add 1 to 2 tablespoons sour cream to each tortilla, fold in half and serve. If desired, add a cucumber and tomato salad with vinaigrette dressing as a side dish.
